Fruity, jammy with a bit of earthy funk. We took our base mead, fortified it with a bit of spirit to 19.5% Alc.\/Vol. and then crushed 100 kg of wild salal berries into a jammy pulp before aging them on the base mead for 2 months. This Salal Mead is the base we use for Esquimalt's Kina-Salal, but this is a much more approachable and crushable variation kind of alike a lighter wild berry liqueur that when served on ice, is a sheer delight after a filling meal. Salal berries and a bit of honey sweetness with \u003cspan\u003ethe faintest bit of ginger, star anise, and grapefruit for a little botanical ooh-la-la. The recipe is simple honey, water and yeast. Oftentimes most mead is then flavoured with various fruits, herbs and roots, but this is nothing but a showcase for our honey. This is also the same 'base mead' that we use in all of the Esquimalt products. So if you want to understand the brass tax of what makes the base of Esquimalt, this is it. \u003cbr\u003e\u003cbr\u003eFermented completely dry, meaning the yeast consume all of the available sugar from our honey and turn it into (honey) wine. It's all the honey flavour, with none of the sweetness. Drinks like a great white wine, serve chilled.\u003cbr\u003e\u003cbr\u003eLike grapes, there is a huge range of 'single varietal' honey that is determined by the primary pollen source of the bees. For example, in BC's Fraser Valley, the primary pollen source for the bee industry is blueberries, so you get a single variety blueberry honey that is a deep dark almost molasses like colour. Our honey is from Fort St. John with the primary pollen source being alfalfa, clover and wildflower. The region is one of the best honey producing locations on the planet and yields a honey that when cold and solid is snow-white and when liquid, nearly water clear. In the early spring, the first pollen source for our bees is dandelion flowers so we get one lot of 'single varietal' dandelion honey! \u003cbr\u003e\u003cbr\u003eWe fermented this special honey into a completely dry dandelion mead and then went one more step and wild harvested 20kg of dandelion flowers. We destemmed every flower and let it soak in the dandelion mead for a few weeks to extract all the floral wonderfulness. Much like the country tradition of making dandelion wine, but with added flare from the dandelion honey! The final result is a dry, white wine style mead with delicate florals and a good amount of earthy funk. Once fermented and turned into delightful mead, it aged for 2 years in ex-Stillhead Distillery rye whisky barrels. The final result is loaded with caramel, vanilla and floral honey, yet very distinctly riding a blurry line between a off-dry sherry and a rye whisky. A fabulous sipper over ice.
