Once fermented and turned into delightful mead, it aged for 2 years in ex-Stillhead Distillery rye whisky barrels. The final result is loaded with caramel, vanilla and floral honey, yet very distinctly riding a blurry line between a off-dry sherry and a rye whisky. A fabulous sipper over ice.
