Gin, Rosso Vermouth, Sake, Pomegranate Syrup and Aromatic Bitters. From our friends over at Edible Vancouver Island comes this cocktail that combines the Japanese-inspired sake with local ingredients from the former and current fishing villages of Ucluelet, Esquimalt and Granville Island.

You can’t go to the West Coast of Vancouver Island without someone saying “If you go any further west, you’ll end up in Japan.” This cocktail casts out a line to bring Japan a bit closer by combining the Japanese-inspired sake with local ingredients from the former and current fishing villages of Ucluelet, Esquimalt and Granville Island.

Directions

  1. Combine all ingredients in a mixing glass, then fill with ice to just above liquid level.

  2. Stir gently with a bar spoon until chilled (about 10–12 seconds).

  3. Double strain into a chilled, stemmed cocktail glass and garnish with an orange peel.
