You can’t go to the West Coast of Vancouver Island without someone saying “If you go any further west, you’ll end up in Japan.” This cocktail casts out a line to bring Japan a bit closer by combining the Japanese-inspired sake with local ingredients from the former and current fishing villages of Ucluelet, Esquimalt and Granville Island.
Ingredients

2 oz (60 mL) Gin / Pacific Rim Lighthouse

0.5 oz (15 mL) Rosso Vermouth / Esquimalt

0.25 oz (7 mL) Sake / Osake - Junmai Nama Sake

0.25 oz (7 mL) Pomegranate Syrup*

2 dashes Aromatic-ish Bitters / Rootside Bitters
Directions
Combine all ingredients in a mixing glass, then fill with ice to just above liquid level.
Stir gently with a bar spoon until chilled (about 10–12 seconds).
Double strain into a chilled, stemmed cocktail glass and garnish with an orange peel.
Recipe Note
* Pomegranate Syrup - Equal parts, by weight, unsweetened pomegranate juice and sugar. Warm juice on the stove to about 60C and add sugar. Turn off heat and stir to dissolve.
