Gin, Dry Vermouth, Orange Bitters and a Pickled Onion. Obviously as Vermouth makers we're big Martini drinkers at home. Usually this means a lemon twist garnish, but more often than not, we turn to the Gibson, which is simply a Martini with a pickled onion garnish. The pickled briny juice from the onion really adds something special to the drink that might just make it one of our all-time favorite cocktails. For a West Coast take on this drink, instead of a pickled onion, add a delicious pickled Spruce Tip from Forest for Dinner

Ingredients
-
1.5 oz ( 45 mL) Gin / Ampersand Distillery
-
0.75 oz (22 mL) Dry Vermouth / Esquimalt
-
2 dashes Orange Bitters / Rootside Bitters
-
1 pickled onion
Directions
Add pickled onion to the bottom of a coupe or Nick & Nora glass
Add rest of ingredients to a mixing glass and fill with ice
Stir until chilled
Strain into glass and enjoy!
